REMYPURE rice starch is also great for fat-reduced formulations allowing for up to 25% fat reduction, maintaining a stable solution with smooth texture and a pleasant taste profile.
The unique performance of the REMYPURE rice starches results from an advanced inhibition process technology that strengthens the native rice starch granules. This makes the functional native rice starch perform similar or superior to chemically modified food starches showing high stability during processing, especially under harsh conditions such as low pH and high shear. The instant rice starch disperses easily in cold formulations where instant incorporation of the starch is necessary to obtain the right viscosity and texture.
Thanks to the rice origin, the REMYPURE rice starch also provides high product stability throughout shelf-life and good freeze-thaw stability. In addition, the granule size of rice starch is very small (2-8 µm) and similar in size to fat globules. This ensures a creamy and smooth texture and makes rice starch an excellent choice for fat-reduced dressings and sauces. It has a clean, neutral taste and provides a nice glossy appearance to sauces and dressings.
